Some scientists now compare the powerful effects these foods have on us to drug addiction. On the other hand, it’s valid to ask whether this is a fair comparison, or simply an overreaction; after all, this is not merely an academic debate. Overnutrition and obesity now contribute to more deaths globally than undernutrition, making it vital to understand why we’re making unhealthy food choices and whether there is truth to the claim that we’re addicted to junk food.  In his new book, <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-style: italic; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">Hooked, journalist Michael Moss <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">makes the case [1] that <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">Big Food [2] companies have engineered their junk food products to cause addiction, with no care for their impacts on public health. While it may be counterintuitive to compare food to narcotics, there is no doubt that junk food exerts a strong influence over us. Just seeing pictures of a favorite snack can make your mouth water. Processed food is any food that has been modified or altered before you eat it. This means any food which has been cooked, smoked, dried, baked, or in any other way altered is considered processed. Junk foods, however, are considered ultra-processed, since they are made with ingredients and methods you wouldn’t recognize from your kitchen. Ultra-processed food products are composed of industrially produced ingredients like high fructose corn syrup, hydrogenated fat, chemical stabilizers, and preservatives, and optimized with the help of neuroscience and marketing to be maximally appealing. The huge multinational food manufacturers behind these products such as Kraft-Heinz, Nestle, and General Mills are referred to collectively as Big Food. Junk foods can be engineered to trigger the brain’s “on switch” by releasing dopamine and inhibiting our self-control. These instincts have deep evolutionary origins. The hunger for high-energy foods--which are heavy in sugar or fat--likely helped our ancestors survive and thrive when food was scarce. Now in a world of overabundance, these same instincts are causing rising obesity levels as people compulsively eat junk foods, contributing to the most common causes of death in both the United States and Korea: heart disease and cancer. Big Food innovates to intensify the craving-inducing sensations caused by their products so that people eat as much of them as possible. Through tweaking the ratios of salt, sugar, and fat in junk food, a “bliss point” of maximum pleasure can be scientifically engineered, making it nearly impossible to stop eating. In the case of creating a new soda, this is done by formulating dozens of variations of a new recipe with different amounts of sweetness, then testing them thousands of times and measuring the positive responses each recipe receives. An analysis of the data is then performed which shows the most popular amount of sweetness, or in other words the “bliss point,” for the highest number of customers. That familiar feeling of needing “just one more” chip or sip of your drink is in fact a carefully engineered feeling designed by Big Food. There is also a biological basis for sugar being addictive. Research on rats has shown that Oreo cookies can cause more activity in the pleasure center of the brain than cocaine, implying that Oreos are more pleasurable. Rats given Oreos also exhibit the <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">hallmark [3] behaviors of addiction: cravings, <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-weight: 700; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">binges [4], and withdrawal. While some say that sugar is as addictive as cocaine, the truth is that cocaine is only addictive because it exploits the same neural circuitry and produces similar feelings to sugar. But we’re not addicted to junk foods only for the taste. Big Food is also a master of marketing and psychology. One fascinating piece of evidence for this is the rainbow colors of M&Ms: research revealed that people are likely to eat more multi-colored foods, even if they all taste the same. Junk foods are also cheap, come in attractively branded packaging, and are undeniably convenient. This makes them an easy choice for modern consumers, who often have little time after work to gather ingredients and cook healthy meals. In response to these criticisms, Big Food companies claim that all people need food and that they simply make popular, affordable products. Some especially tasty products are called addictive by critics like Moss--but it’s ultimately up to people to decide what they eat. Additionally, Big Food companies usually recommend small serving sizes of their products. For example, Coca-Cola’s small 500ml bottle is <span style="12pt; font-family: Georgia; color: rgb(0, 0, 0); background-color: transparent; font-style: italic; font-variant-numeric: normal; font-variant-east-asian: normal; vertical-align: baseline; white-space: pre-wrap;">supposed to be two servings, and Doritos recommends a serving size of only 12 chips at a time. Whether we listen to their portion advice or not is up to us as consumers. Yet, many people are eating too much junk food, even when they know it’s bad for them. This certainly looks similar to addiction to cigarettes or other narcotics, where users know their habit is toxic. Big Tobacco’s products are known to be unhealthy and addictive, so they are therefore heavily regulated. Medical research shows that higher purchases or consumption of ultra-processed junk food are associated with being overweight or obese, and that sugar has addictive potential. Wouldn’t it, therefore, make sense to treat Big Food and its junky products the same as Big Tobacco? That’s exactly what the South American nation of Chile has decided to do. In Chile, junk foods are no longer allowed to use cartoons and other advertisement strategies optimized for children. Additionally, foods high in added sugar and calories must display large warning labels, similar to those on cigarette packaging, warning potential customers about the contents of these foods. Countries including Peru, Uruguay, Mexico, and Israel have all followed Chile’s lead. Other nations, including the UK and South Africa, are instituting sugar taxes on soda, hoping to make it less affordable and therefore less attractive to consumers. However, it is simply too soon to tell if these strategies will be able to reverse the trend towards overconsumption.
